Crispy on the outside and filled with creamy cheese and sweet corn, this modern twist on the classic samosa has become a favourite across cafés and home kitchens alike, appealing equally to children and adults.
What makes cheese corn samosa stand out is its balance of flavours. Unlike traditional samosas that rely heavily on spices, this version keeps things mild and comforting. For the filling:
Boiled sweet corn (coarsely crushed), grated mozzarella or processed cheese, finely chopped onion, capsicum and green chilli, black pepper powder, red chilli flakes, mixed herbs or oregano, salt to taste, and butter or oil.

Samosa patti or spring roll sheets, and flour-water paste for sealing.
For frying:
Oil for deep frying.
Begin by heating butter or oil in a pan and sautéing onions until soft. Add capsicum and green chilli, cooking briefly to retain a slight crunch. Stir in crushed sweet corn and sauté on medium heat, seasoning with salt, black pepper, chilli flakes and herbs. Once combined, turn off the heat and mix in the grated cheese. Allow the filling to cool completely.
Place the cooled mixture onto samosa patti or sheets, fold neatly into triangles and seal the edges using flour-water paste. Deep fry on medium heat until the samosas turn golden and crisp. Drain excess oil and serve hot with green chutney, tomato ketchup or a cheese dip.
